The BAADER 192 is a highly efficient, automated commercial fish processing machine. Built by the German manufacturer BAADER, it is widely used in the seafood industry—both in land-based factories and onboard fishing vessels—to automate the multi-step process of preparing whitefish and salmon.

Instead of requiring separate machines or manual labor for each step, the BAADER 192 combines heading, gutting, and filleting into a single, high-speed operation.

Core Specifications & Capabilities

  • Fish Species: Primarily medium-sized whitefish like Cod, Alaska Pollock, Saithe, Haddock, Hake, and Hoki, as well as Pink Salmon.
  • Throughput: Processes 80 to 100 fish per minute depending on the size of the fish and operator skill.
  • Working Range: Accommodates fish from roughly 40 cm to 100 cm in total length (depending on the exact species).
  • Labor Efficiency: It only requires 1 or 2 operators to manually feed the whole fish into the loading trays.

How It Works

The machine achieves incredibly high yields compared to older mechanical models by integrating electronic and computer-controlled measuring tools.

  1. Electronic Measurement: As soon as an operator places a fish into the feed tray, the machine electromechanically measures the fish’s precise size.
  2. V-Cut Heading: Computer-controlled tools adjust the position of the knives dynamically for each individual fish, making a precise «V-cut» to remove the head while conserving as much meat as possible.
  3. Roe Extraction: A specialized carousel gently extracts the belly contents. It is designed to remove fish roe (eggs) almost entirely undamaged, protecting a highly valuable secondary product.
  4. Filleting: The fish is automatically transferred via a timed system to the filleting deck. Active cutting tools adapt to the structural frame of that specific fish to carve out high-quality standard fillets (or fillets without pin bones), minimizing stress on the meat to prevent gaping or blood spotting.
  5. Downstream Integration: The machine outputs the fillets tail-first, making it perfectly timed to feed directly into a skinning machine (frequently paired with the BAADER 52).

Versatility Note: The heading and gutting deck can actually be separated from the filleting unit. When sold or operated as a standalone heading/gutting unit for H&G products, it is designated as the BAADER 192 HR.
