The BAADER 588 is a specialized, industrial fish filleting machine designed for processing small to medium-sized whitefish. It works effectively with both fresh and defrosted raw materials.
Built as a successor to mechanical concepts seen in salmon processing (like the BAADER 581), it aims to maximize yield while significantly reducing downstream manual trimming.

The machine processes headed and gutted (H&G) or head-on fish depending on the version and configuration:
- Atlantic / Pacific Cod: 350 g – 2,500 g (35–70 cm)
- Haddock: 400 g – 2,300 g (35–65 cm)
- Saithe: 400 g – 2,000 g (35–62 cm)
- Hake: 160 g – 800 g (20–47 cm)

- Stress-Free Cutting: Unlike older machines that rely heavily on static stickle and scraper knives, the 588 uses active, rotating flank knives. This reduces stress on the flesh, preventing «gaping» (tissue separation) and blood spots, even in notoriously soft fish like hake or defrosted raw material.
- Hygienic Open Design: It features an open-frame stainless steel layout where the main components can be lifted or opened completely. The conveyor belt system and upper bone guides can be dismantled quickly without specialized tools for rapid sanitation.
